Orange Coconut Rice

Orange Coconut Rice
  • 2 cups jasmine rice
  • 2 cups coconut milk (good-quality)
  • 1 3/4 cups water
  • 1/2 Tsp salt
  • 1/2 Tsp coconut oil (or vegetable oil)
  • 1/2 Tsp sugar
  • 1 1/2 Tsp Warn Reserve Orange bitters

Rub the oil over the bottom of a large pot. Rinse the rice and add to pot with the coconut milk, water, sugar, bitters and salt. Set over medium-high to high heat. Stir occasionally to keep rice from burning. Bring to a gently bubble, then stop stirring and reduce heat to low or medium-low so the water simmers. Cover with a lid and let simmer 15 to 20 minutes, or until most of the liquid has been absorbed. Turn heat off and let sit for 5 minutes. Fluff with fork and enjoy!
