Burnt Cherry Sazarac

Ingredients:

2 oz rye whiskey (or cognac, if you prefer the original version)

1 oz Warn Reserve Burnt Sugar Syrup

2-3 dashes Warn Reserve Barrel-Aged Emmett Cherry bitters

Absinthe (just a rinse)

Lemon peel (for garnish)

Ice
Method:

Chill the glass: Place an Old Fashioned glass in the freezer or fill it with ice water to chill.

Mix: In a mixing glass, mix the syrup with the bitters.

Add whiskey: Pour in the rye whiskey and stir with ice until well-chilled.

Absinthe rinse: Discard the ice from your glass and rinse it with absinthe (swirl a dash around and dump the excess).

Strain and garnish: Strain the whiskey mixture into the prepared glass (no ice). Express a lemon peel over the drink and use it as garnish or discard.
